BREAKFAST

AVOCADO ON SOURDOUGH WITH BALSAMIC ROASTED TOMATOES

Serves: 1

Time: 15-20 minutes

1 slice sourdough bread

½ avocado, mashed

6 cherry tomatoes

1/4 red pepper

balsamic vinegar (measure with your heart)

3 chicken sausages (Heck is my favourite brand or from the butchers)

Optional - Egg - scrambled or poached!

1. Add your chicken sausages to an air fryer or oven for 10-12 minutes

2. Pop your cherry tomatoes and red pepper in tin foil, add the balsamic vinegar, drizzle of olive oil and rock salt. Roast for 10-15 minutes in air fryer or oven.

3. Mash your avocado with salt, pepper, chilli flakes and lemon juice and spread onto the toasted sourdough.

4. I personally opt for scrambled egg with this meal. To make scrambled egg, heat a little butter in a frying pan on a low heat, add your eggs and gently fold. Low and slow is the aim!

5. Once all cooked. Serve and enjoy! Can also add some rocket or watercress for ultimate skin and gut health.
